Abstract
Carcass and meat quality was evaluated in young Merino rams, in 3 groups of 19, fattened from 26 to 42 kg liveweight on diets containing 20, 40 or 60% oats. Hot carcass yield was 48.8, 49 and 49.1%, respectively. Weight of leg was 2.41, 2.43 and 2.46 kg; content of lean was 71.8, 72.7 and 72.5, of fat 15.1, 13.3 and 14.4, and of bone 12.7, 14 and 13.1%. Chemical composition of meat was 24, 23.6 and 23.4% DM, 19.2, 19.1 and 19.1% crude protein, 3.6, 3.2 and 3% fat, and 1.1, 1.1 and 1% ash. Water holding capacity (Grau and Hamm method) was 7.3, 7.6 and 8.3 cmsuperscript 2. Results of sensory evaluation were similar for all groups.
