The cell-wall proteinase purified from Lactococcus lactis var. lactis NCDO 763 was incubated at 35 degrees C with alpha s1-, alpha s2-, beta - and kappa -casein, and with oxidized chain B insulin. After hydrolysis, the non-casein components of the fraction (peptides soluble at pH 4.6) were separated by reverse-phase HPLC using 2 successive elution systems. The main peptides were identified by their amino acid composition and sequencing.
