Experiments on hydrolysis by alpha -amylase of isolated starch granules from maize grains after deproteinization with toluene or treatment with Triton X-100 or addition of papain, trypsin or a highly purified protease from maize grain to the incubation medium showed that starch membrane structures (proteins and lipids) were involved in the regulation of the hydrolysis process.
