The role of Holstein-Friesian sires in improving the chemical composition and technological properties of milk produced by Black Pied and Simmental cows



Sovremennaya tekhnologiya syrodeliya i bezotkhodnaya pererabotka moloka Materialy Vsesoyuznoi Nauchno Tekhnicheskoi Konferentsii Erevan, 14-16 noyabrya 1988 g: 97-98



For 12 Russian Black Pied (RBP), 12 Holstein (H) X RBP, 12 Russian Simmental (RS) and 12 H X RS cows resp., milk produced in the first 2 lactations averaged 3.62, 3.58, 3.75 and 3.59% fat, 3.39, 3.35, 3.48 and 3.42% protein, and 2.62, 2.59, 2.69 and 2.64% casein. Its av. coagulation time was 32, 35, 27 and 38 min, with a coagulation phase of 28, 30, 24 and 32 min, a gelling phase of 4, 5, 3 and 6 min, and a coagulum density of 0.31, 0.28, 0.45 and 0.26 g/cmsuperscript 2.
