Tocopherol contents and fatty acid composition in commercial and homemade dressings

This study was undertaken to examine the content of tocopherol homologues, .alpha.-tocopherol equivalent value and fatty acid composition of 25 commercial and homemade dressings. The results were as follows: 1) The commercial dressings included two dressings without fats and oils, four imported dressings, and four vitamin E fortified ones. 2) All of the domestic products and two of the four imported dressings were labeled with manufacturing dates. 3) .alpha.-Tocopherol equivalent values per 100g of the vitamin E non-fortified and fortified commercial dressings, were 0.04 to 16.4 mg and 7.15 to 23.6 mg respectively. On the other hand, those of the homemade dressings ranged from 2.79 to 9.62 mg. 4) The lipid contents and linoleic acid proportion to total fatty acids of the domestic products were zero to 78g/100g and 24 to 67% respectively. 5) The linoleic acid proportion of an imported dressing using olive oil was 31% and that of imported ones using other vegetable oils was about 50%. 6) The linoleic acid proportion of homemade dressing was 42 to 49%. 7) The ratios of .alpha.-tocopherol equivalent values (mg) to polyunsaturated fatty acids (g) of the commercial and homemade dressings were 0.21 to 0.81 and 0.12 to 0.32 respectively. 8) Because of a wide variety of .alpha.-tocopherol equivalent values in commercial and homemade dressings, it is desirable to examine the tocopherol contents of the products when applied to nutrition guidance.
