Barley grain composition and morphological changes during germination are briefly considered. Grain enzymes, particularly those of starch degradation (amylases, debranching enzyme and alpha -glucosidase) and mobilization of reserve proteins during germination are discussed. The role of gibberellins in germinating grain particularly in the aleurone layer is examined.
