, : Batch and continuous fermentation methods for the production of dextransucrase. Dissertation Abstracts International B, Sciences and Engineering 53(10): 5322

A literature review was carried out on the production and purification of dextransucrase and dextran, and the enzymatic mechanisms involved. Research was performed on dextransucrase production by Leuconostoc mesenteroides NRRL B512(F) in described fermenters of capacity 2.5-1000 litres, using the fed-batch mode to extend the exponential growth phase. Dextransucrase activities of up to 450 DSU (21.67 U)/ml were obtained without aeration.
