Behaviour of Yersinia enterocolitica in fresh dry sausages
In pattern examinations, meat emulsions of different dry sausages were contaminated with virulence-plasmid containing strs of Yersinia enterocolitica (Y.e.), serotypes O : 3, O : 8, and O : 9. The dry sausages were stored at 3 to 5 degrees C and 15 to 18 degrees C.
