Economic impact of cooling delays on fruits and vegetables

Technical innovations in freezing and refrigeration of fruits and vegetables: ; 45-49

The results of an earlier study which determined the effect of cooling delays on peach quality were combined with estimated economic values of peach quality characteristics to provide a method for evaluating the economic impact of delayed cooling in peaches. Values for peach quality characteristics (size, damage, ground colour, firmness and maturity) were estimated at the warehouse and retail stages.
