Economic study of a Criollo goat milk and cheese production enterprise in San Juan Ixtenco, Tlaxcala

This study was carried out on a semi-intensive farm with a total of 110 Toggenburg X Saanen goats including 42 adults. Milking was by hand 2x daily and average lactation length was 240 days with a daily av. yield of 1.5 litres/goat. Average daily milk yield of 63 litres was made into soft cheese, which yielded 250 g cheese/1.75 litres milk. Total annual costs and sales were P 11 577 000.00 and P 29 000 000.00 respectively, providing an annual net profit of P 17 474 880.00.
