54 bulls, 45 heifers and 45 steers were fed a high energy level (maize silage ad lib. plus 1.8 kg concentrates daily) or a low energy level (restricted intake of maize silage plus 1 kg concentrates daily), and were slaughtered at a live weight of 200 kg (at the start of the experiment), or at 350, 425 (heifers only), 500, 575 or 650 kg (bulls and steers). One of the carcass halves was separated into 13 joints, and then separated into lean, fat, bone and tendons.
