Estimation of nitrites and nitrates in meat products by ion chromatography
A suppressed ion chromatography method for simultaneous estimation of nitrites and nitrates in meat products is described. A mixture of water and n-heptane is used for extraction followed by purification by passage over a reversed phase cartridge. Sodium tetraborate is used as mobile phase. Retention time for nitrites and nitrates is 1.9 and 3.1 min and mean recovery 79.9 and 95.4%, respectively. Limits of detection are 0.3 and 0.4 micro g/g.
