Two systems (from the Netherlands and New Zealand resp.) of estimating and controlling processing efficiencies in cheese plants are described. Both use careful control of manufacturing, extensive analyses of milk, whey and cheese, and historical data; these analyses are used to assess optimum recovery of components (or losses) and optimum quality.
