In the Cote d'Ivoire, pineapple colour is enhanced by treatment with ethephon before harvesting. During the hot season, when the flesh of fruits is translucent, this treatment may be ineffective. The effects of temperature, pH of the ethephon solution and stage of fruit maturity on ethephon metabolism in the epidermis were investigated. In pre-harvest experiments in the field, the quantity of ethylene absorbed by the epidermis was similar for fruits at different stages of maturity.
