Evaluation of the quality of a dehydrated product based on potato (Solanum tuberosum), lupin (Lupinus mutabilis) and egg - Evaluación de la calidad de un producto deshidratado en base a papa (Solanum tuberosum), lupino (Lupinus mutabilis) y huevo

Archivos Latinoamericanos de Nutricion 43(1): 55-60

After a study of 20 dehydrated mixtures of potato, lupin and whole egg ranging in composition from 0:94:6 to 94:0:6 with egg 6% for all mixtures involving limiting amino acids, chemical score, percentage of protein energy, net energy of protein origin and net protein utilization, it was concluded that 60:34:6 was the mixture best suited to feeding preschool children.
