Fatty acid and sterol content in eight populations of lentil (Lens esculenta Moench)

The fatty acid (FA) and sterol composition of seeds of the lentil cultivars Altamura, Pantelleria, Ventotene, Eston Canada, Laird Canada, Regular USA, Rosso Turchia and Verde Turchia are reported. All samples were high in unsaturated FA (590 to 695 mg/g total FA). Palmitic acid was the main saturated FA (two-thirds of total saturated FA) followed by stearic acid. The major sterol fraction was beta -sitosterol followed by stigmasterol and campesterol.
