Instrumental evaluation of fat quality in heavy pigs. Experimental findings

The possibility of developing an objective method of assessing fat firmness in heavy pigs was studied. To induce different levels of saturation in depot fat 58 pigs, in 2 groups, were given a standard diet based on maize or a diet with wheat replacing maize. Pigs were slaughtered at about 175 kg and fat firmness estimated using a Carcass Fat Hardness meter. Fat was also assessed sensorially and iodine number estimated.
