Investigating goat cheeses in Andalucia
Several studies on cheese characterization and identification have been carried out in Spain, but never included cheese from Andalucia. However goat milk produced in this region represents approx. 40% of the total national production. In this study, numerous goat farms, milk collection centres, farmhouse cheese makers and cheese factories were visited, and information concerning technological, sociological and management aspects was collected.
