Meat production in Merino ewes. Composition of carcass tissue in the whole carcass and carcass cuts

For 40 Merino ewes, slaughtered at an average age of 6.9+or-1 years, body weight at slaughter averaged 40.24+or-7.28 kg, cold carcass weight 18+or-3.99 kg and the average percentage of carcass lean, bone, intramuscular fat and subcutaneous fat in the half-carcass was 57.1, 19.2, 12.7 and 11% respectively. Data are tabulated for the weights and percentages of lean, bone and fat in different carcass cuts.
