This paper sets out to describe the main issues in milk payment schemes. The main issues are which quality criteria are used and how this is 'translated' in paying (or fining) for milk received; secondly, how the basic price is determined: which ingredients are relevant? A third issue discussed is the relationship between milk producers and processors.
