The gliadin electrophoretic banding pattern of 50 analysed varieties comprised 26 components, of which 12 were stable (in all varieties) and 14 variable (only in some varieties). The number of glutenin subunits was 31 (7 of them stable and 24 variable). The omega gliadins and glutenin B subunit had the highest number of variable components.
