The ascorbate index as an indicator of the amount of ascorbic acid and nitrates in vegetable products



Voprosy Pitaniya ( 4): 54-56



A simple method of estimating the carcinogenic potential of nitrates in plant products using the ascorbate index or ratio of ascorbic acid to nitrates in the plants is described. The higher the ascorbate index the greater is the inhibiting effect of ascorbic acid on transformation of nitrates to nitrites and the less harmful the effects of the nitrates.
