The biochemical, genetic and physiological properties of aminopeptidase N from Lactococcus lactis

A new peptidase (aminopeptidase N), isolated from Lactococcus lactis var. cremoris Wg2, was purified and characterized as a metallopeptidase with an MW of 95 000, and the ability to hydrolyse large and small oligopeptides. The pepN gene encoding the aminopeptidase was characterized and shown to consist of an open reading frame of 2538 base pairs encoding for a protein of 846 amino acids.
