, : 11S and 7S globulin fractions in soyabean seed and soyabean curd characteristics. Korean Journal of Crop Science 39(4): 348-352

With a view to improving the 11S/7S globulin ratio, a number of soyabean genotypes were screened using SDS-PAGE of total seed proteins. The 11S/7S ratio ranged from 1.29 in Jangyeob-kong to 1.38 in Danbaek-kong and Danyeob-kong, the higher value being more favourable in terms of nutritive value. In soyabean curd made from seed protein differing in 11S/7S globulin ratio, that made from crude 11S globulin was markedly harder than that made from crude 7S globulin.
