Abstract
Extracts of garlic, onion and leek were tested on agar diffusion plates for their inhibitory effect on 7 enteric pathogenic bacteria (E. coli, Salmonella typhimurium, Salmonella Havana, S. para, Shigella flexneri and S. dysenteriae). All the bacteria were inhibited by the garlic extract but onion and leek extracts had no effect. The MIC values for the garlic extract were 11.25-360 micro g/ml. The antibacterial activity was inactivated at 100 degrees C after 15 min.
