Despite the problems of the food-producing sector of Benin in recent years, food processing, considered an informal and marginalized market, has demonstrated dynamism and a capacity to adapt to the socioeconomic changes overtaking the country. The increased activity is most notable in the production of gari (cassava meal). The paper examines the function of micro-enterprises as well as their performance.
