Effect of short term exposure of elevated CO2 on flesh firmness and ester production of strawberry

Strawberry Hokowase fruits were treated with 20% CO2 for 12-48 h at 1 degrees C and then stored at the same temperature for an additional 24-48 h; subsequently they were transferred to 20 degrees and held for 8 h. Fruits exposed to CO2, including those stored for 8 h at 20 degrees were firmer than the control fruits exposed to air. CO2 treatment had only a little effect on the evolution of methyl acetate and methyl butyrate, the predominant volatiles.
