Effect of sodium chloride on the stability of buffaloes' and cows' calcium caseinate

The effects of 0.1 to 0.5 M NaCl on stability of buffalo and cow milk calcium caseinate (CC) with 0.02, 0.03 and 0.04 M CaCl2 content were studied. Maximum precipitation of CC occurred with NaCl concentration of 0.3 M irrespective of CaCl2 content or kind of CC, and buffalo CC showed higher rate of precipitation than did cow CC at all CaCl2 concentrations.
