Effect of some factors on the clotting activity of crude enzymes extracted from some fish stomachs

Milk-clotting activity (MCA) of crude enzyme extracts from stomachs of Morgan (Pagrus pagrus), Myas (Pomatomus saltator), Loot (Scania umbria) and Wakar (Epinephelus inermis) sea fish and of calf rennet (control) respectively decreased from 30, 10.0, 12.0, 1.1 and 50 RU/ml at pH 6.2 to 2.66, 4.16, 1.23, 0.40 and 6.81 RU/ml at pH 6.6, and clotting time (CT) increased correspondingly from 20, 60, 50, 540 and 12 s to 225, 145, 485, 1500 and 88 s.
