Green banana fruits harvested from greenhouse-grown plants were placed in glass jars (3 fruits/5-litre jar) connected to an air flow-through system with a ventilation rate of 1 litre/h. The jars were held at 13, 20 or 30 degrees C. Alternatively, fruits were placed in plastic containers (modified atmosphere storage) at 30 degrees or were treated with 5 p.p.m. ethylene for 24 h at 30 degrees then transferred to 20 degrees to ripen.
