The growth and activity of Propionibacterium freudenreichii var. shermanii was studied in skim milk, ultrafiltration retentates of skim milk (2- and 3-fold concentration), and in mixtures of retentates of skim milk (concentrated 3-fold) and demineralized whey (concentrated 20-fold); mixtures of retentates were prepared with 80:20, 70:30 and 50:50 milk:whey ratios.
