Characterization and identification of yeasts

During the past 2 years, yeasts present in a vineyard on grape were isolated and characterized in Switzerland by physiological and molecular genetic methods. The taxonomy of some of the microorganisms found is discussed. Physiological tests never gave reliable results in yeast characterization, but molecular genetic examination gave reproducible information on yeast species and strains.
