Characterization of home-produced phacelia honey

In recent years, good honey crops have been obtained from the increasing areas of Phacelia tanacetifolia being grown for seed in Germany. Results are reported for 35 phacelia honeys studied (1989-1994), including average values for: electrical conductivity, 0.14-0.25 mS/cm; invertase, 9.5-18.5 units; glucose oxidase, 2.6-9.0 micro g H2O2 g-1min-1; proline, 203-485 ppm; water, 15.7-16.7%; fructose:glucose ratio, 0.99-1.17; sucrose, 0.52-3.41%.
