Detection of rennet whey solids in dried milk by capillary electrophoresis

A method is described for detection of rennet whey solids in dried milk or dried sour buttermilk on the basis of determination of casein macropeptides by capillary zone electrophoresis. A hydrophilically-coated capillary was used in combination with 6 M urea in a citrate/citric acid buffer (pH 3). Under these conditions genetic variants A and B migrated as a single peak.
