Effect of cultivar on guava pulp quality

Three guava cultivars, EEA 18-40, Belic L-97 and Belic L-207, were evaluated according to their sensory and rheological properties during the manufacture of purees. Puree made from EEA 18-40 was the best in flavour, colour and aroma, having an apparent viscosity >10 Pa s.
