Rice Pajam, BR-2 and BR-11 were selected and the behaviour of crack generation, the effects of milling machines and moisture content on breakage, and the cooking and eating qualities of rice subject to different degrees of milling, were studied. Samples of the rice were taken for steaming, hot or cold soaking, parboiling, heated air drying, sun drying, polishing and dehusking.
