How to cool butter properly for easier spreading

Cooling of butter followed by kneading can make spreading easier by up to 30%. Cream is pumped from a butter silo to a butter cooler, where a plate cooler is used to cool the butter to 4 degrees C. The butter is then conveyed to a butter kneading appliance, where the low temperature is maintained while the butter is kneaded. Unevenness in crystallization is eliminated, resulting in easier spreading.
