Paradoxical changes in the structure and volume of world potato production and trade are explained. While potato production in Europe fell by 50 Mt in the period 1961/63-1991/93, in developing countries it increased from 29 Mt to 85 Mt so that world output rose from 265 Mt to 275 Mt. Despite potatoes' bulky and perishable nature, exports continue to expand by 5% per year.
