As part of a study on oak octalactone in wines and spirits matured in oak barrels, multidimensional gas chromatography was used to determine beta -methyl- gamma -octalactone (oak lactone) in wood extracts obtained from 30 newly felled oaks from French and American forests. The species were pedunculate oak (Quercus robur) from Limousin, France, sessile oak (Quercus petraea) from Troncais, Jupilles and Darney, France, and white oak (Quercus alba) from Virginia and Missouri, USA.
