The functions of taste recognition with regard to health are noted and the mechanisms of response of taste receptor cells (from various animals) to salty and sweet tastes are discussed. Response to salt involves Na+ channels, while responses to sweet compounds involve Ca2+ and/or K+ channels activated by previous release of (depending on animal and sweetener) either the 3',5'-cyclic monophosphates of adenosine and/or guanosine, or inositol 1,4,5-trisphosphate.
