Sweet dreams come true. Applied FTIR technology in ice cream mix analysis

Scandinavian Dairy Information 9(4): 34-36

The use of fourier transform infrared (FTIR) technology for simultaneous analysis of ice cream mix components, is illustrated by its application to the analysis of specific sugars. Partial least squares calibration is used to distinguish between sugars such as lactose and galactose that have very similar spectra.
