Sweet tempered taste

Sweet tempered taste

Dairy Industries International 61(6): 33, 35

The use of intense sweeteners such as Sunett, a commercial brand of acesulfame K manufactured by Hoechst, Germany, enables low-energy milk products such as fromage frais and yoghurt to be manufactured with the full-bodied flavour that consumers expect. Use of these sweeteners and sweetener blends is adjusted to the requirements of each individual product so that functional needs are fulfilled and the taste blends in with the ingredients used in each product.
