The value of producing low-energy flavoured milks by replacing sucrose with aspartame is explained. In milks, the exchange is relatively simple because no further bulking agents are needed. Costs for sweetening such products are up to 30% lower, enabling manufacturers to add value to the product by including more fruit, more expensive flavouring, or even to enhance an advertising campaign.
