Current practice in cane juice clarification is reviewed with a view to optimizing the process. Practical consideration is given to the chemistry and mechanisms involved and their effects on the removal of impurities. It is noted that the best flocculant to use may depend on concentrations of phosphates and calcium present; correct dissolution of the flocculant is also important.
