The conformation of sucrose in water: a molecular dynamics approach

, : The conformation of sucrose in water: a molecular dynamics approach. Liebigs Annalen der Chemie ( 11): 1925-1937

A molecular mechanics analysis of the conformational properties of sucrose in vacuo, in terms of the intersaccharidic torsion angles Phi and Psi , revealed 3 energy minima. The geometry of the 'global minimum energy' conformation closely resembles the solid-state structure.
