The contexts of culture, environment, and food
During studies in the Philippines, China, Niger, India, and Peru, vitamin A deficiency was shown to be due to a lack of sufficient vitamin A in community food supplies. The overall performance of the focused ethnographic study (FES) protocol in investigating the availability of vitamin A-rich foods in communities is reviewed. Food availability and food selection and consumption of pregnant and lactating women and infants and children are discussed.
