World milk production has been falling since 1990. Of the milk produced globally, 38% is used for butter, 34% for cheese, 20% for market milk and 8% for other milk products. Europe accounted for 46% of world milk production in 1994, compared with 50% in 1991. Worldwide, there was little change in the consumption of milk products in 1993, with consumption of market milk falling by 2% while cheese consumption increased by 0.5%.
