The automated cheesemaking system that was installed at White Clover Dairy (Hollandtown, Wisconsin, USA) in 1995 for the manufacture of European style Gouda and Edam cheese, is described. A total of 15 batches of Gouda and/or Edam is produced each day in three 20 000-lb vats, and the curd is transferred through cheese forming towers, mould handling and final pressing. The curd is pressed under whey in the towers to give a more closed body and traditional nutty flavour.
