Chemical and biological studies on processed guar (Cyamopsis tetragonoloba) meal

Autoclaving raw guar meal resulted in considerable destruction of haemagglutinins (84%) and trypsin inhibitors (84%) without much changing the saponin (6.1%) and phytate (7.5%) contents. Acidified water leaching of autoclaved meal decreased the concentration of saponin to 2.1%, phytate to 3.9% and polyphenols to 0.76%.
