A brief overview is given of the use of reverse osmosis to produce skim milk concentrates. Two methods involving reverse osmosis are compared: (A) reverse osmosis until the desired SNF content is reached, followed by coagulation; or (B) reverse osmosis, followed by coagulation and syneresis until the desired moisture content is obtained.
